Kossuth crescents promise a roll by name, yet the tray holds a light walnut sponge. Once cut into half-moons, every piece carries a different share of toasted nuts and lemon-scented cake.

Method, step by step

  1. Mix the soft butter with the sugar until foamy, then add the egg yolks one by one. Mix or work just until uniform; over-mixing with more dough and foam can spoil the texture.
  2. Add the flour and lemon zest, and finally slowly stir in the egg whites beaten to a stiff foam. Go slowly and check the texture, aroma and balance of flavors before each subsequent operation.
