During the cooking of Grízes teszta — canteen refilled, there is always a spoon that is mysteriously tasted again and again. The canteen either dusted or swam. At home, we toast it until golden brown and make peace with the past with apricot jam. There is no scientific explanation, just a strikingly clean leg at the end of dinner.

Thorough preparation

  1. Preparation: prepare all the ingredients and tools, read the steps, then measure the ingredients. This way, you don't have to rush while cooking, and it's easier to find the right consistency.
  2. Fry the grits in fat over medium heat until evenly golden brown. Work at medium heat, stir occasionally and allow time for the aroma and color of the ingredients to develop nicely.
  3. Carefully pour hot water over it, cover and let it swell. Go slowly and check the texture, aroma and balance of flavors before each subsequent operation.
  4. Cook the pasta, then mix thoroughly with the snare semolina. The liquid should just bubble evenly; in the meantime, check the softness and, if necessary, replace the liquid in small portions.
  5. Serve with icing sugar and apricot jam — you can leave out the aluminum tray. Taste one last time before serving, then serve fresh to the table for the best temperature and texture.
  6. Finishing and serving: let the food settle for a few minutes, if its character allows. Taste it, adjust the seasoning, and then serve it at the right temperature for the food.

Practical tips and common mistakes

  • Fry the grits slowly and carefully add the water; the goal is snare crumbs, not edible plaster.
  • When baking, measure accurately, and use the butter and eggs at the temperature required by the recipe.
